Strawberry Ice Cream
This healthy ice cream only requires three ingredients: 1 cup of frozen strawberries, 1 frozen banana, and 1/2 cup of cold milk. You can use almond milk, whole milk, or even soy milk. Blend the ingredients together and enjoy.
Vegan Chocolate Ice Cream
A quick stop into a grocery store in Vancouver will allow you to shop for coconut cream (two cans), unsweetened cocoa powder (2/3 cup), pitted dates (about 14 ounces), vanilla extract (1 teaspoon), and unsweetened almond milk (1/2 cup). Add the dates to a food processor to blend into a paste, using a little hot water as needed. Then, combine all of the ingredients in a blender. Freeze overnight before you scoop to serve.
Peach Ice Cream
Buy four organic peaches at the health foods store along with vanilla extract (1 teaspoon), chilled coconut milk (1 1/2 cups), and maple syrup (1/3 cup). Peel, pit and cut up the peaches. Then, combine everything into a high-speed blender. If you're using an ice cream machine, let it churn for about 30 minutes. Otherwise, pulse in the blender for a few minutes before letting it freeze overnight.
Cottage Cheese Ice Cream
If you want a protein-packed, healthy ice cream, you can visit a grocery store in Vancouver to pick up full fat cottage cheese (2 cups), peanut butter (2 tablespoons), chocolate chips (2 tablespoons), and honey (1/4 cup). Blend the cottage cheese, honey and peanut butter together in a blender. Then, stir in the chocolate chips. Transfer to a container to freeze for at least four hours before serving.
